Use water that is hot but not boiling. Boiling water can make matcha taste harsher and more bitter.
A simple method is:
- Sift 1 to 2 grams of matcha into a bowl.
- Add about 60 to 80 mL of hot water.
- Whisk until the matcha looks smooth and lightly foamy.
For a more traditional experience, choose a ceremonial grade matcha designed to be whisked with water and enjoyed on its own.
For a Matcha Latte, Start With Water
Even when making a latte, the matcha should usually touch water first.
Whisk the powder with a small amount of hot water until there are no visible clumps. Then pour the matcha over milk and ice.
This creates a smoother drink and helps the matcha flavour spread through the milk instead of collecting at the bottom.
How Much Water Should You Use?
You do not need much water for a latte.
Around 30 to 60 mL is usually enough to create a smooth matcha base. Too much water can make the latte taste thin, while too little may make the powder harder to whisk.
Once the matcha is smooth, add as much milk as you like.

Use water when you want traditional matcha. Use water first and milk second when you want a latte.
